Menudo

Menudo is prepared in the north of Mexico.

The soup contains tripe, hominy and chili. It is stewed for hours with garlic and other spices. It is also rich, red and has a thin paper-like coating.

2 pounds tripe cut in 1 inch squares
2 teaspoons salt
1 teaspoon cumin
1/2 teaspoon black pepper
14 1/2 ounces hominy, whole, canned
1 pound pork knuckles raw
4 each garlic cloves crushed
4 tablespoons chili powder
1 tablespoon oregano
2 tablespoons butter

Menudo is served in big open steaming bowls. It is usually eaten in the early morning hours after people have come home from a night out.
